DeCic, who is certified in holistic nutrition, recommends adding pumpkin purée to smoothies, oatmeal, and yogurt bowls to enhance both flavor and nutritional value. Canned organic pumpkin purée, when consumed in about one cup, provides more than 10% of the daily potassium requirement and contains approximately 4 grams of fiber. The nutritionist points out that pumpkin is also high in antioxidants, which have been linked to a range of health benefits, particularly in reducing the risk of inflammatory conditions.
Alongside pumpkin, other brightly colored foods like butternut squash and carrots are rich in carotenoids, which play a crucial role in protecting cells from damage. DeCicco advises reading labels carefully, as many canned pumpkin products labeled as ‘pumpkin pie mix’ often contain added sugars. Instead, she recommends looking for cans that simply list ‘organic pumpkin’ as the main ingredient, and if additional sweetness is desired, suggesting the use of natural sweeteners like ground cinnamon, nutmeg, ginger, and low glycemic sugars such as coconut palm sugar.
For a nutrient-dense snack, DeCicco advocates the inclusion of pumpkin seeds. These seeds are not only rich in protein and fiber but also high in antioxidants, vitamins, and minerals like zinc, potassium, magnesium, and iron. A quarter-cup of pumpkin seeds can provide about 10 grams of protein and 3 grams of fiber, with even more fiber available when the seeds are consumed after they are shelled. DeCicco emphasizes the importance of pumpkin and its seeds in promoting immune health, supporting prostate health, and maintaining stable blood sugar levels.
